Hello! Let me introduce myself.

Hey There! I’m Layla Vickie Slow Cooker Specialist | Recipe Developer | Busy Mom Advocate | Age 43 Rapid City-based home cook who believes dinner should be ready when you walk in the door, not a chore you start at 6 PM.
My Story
Growing up in the Midwest, the kitchen was always the heart of the home, but as I entered my 30s, it started to feel more like a battleground. Between juggling a full-time job here in Rapid City and managing the chaotic schedules of three growing kids, the “joy of cooking” had completely evaporated. I found myself in a cycle of guilt—relying on expensive takeout or throwing together bland, panic-induced meals that nobody actually wanted to eat.
I wanted to be the mom who put a nutritious, hot meal on the table, but I simply didn’t have the bandwidth to chop vegetables for an hour after a long workday. My pantry was full, but my energy was empty. I felt like I was failing at one of the most basic parts of caring for my family, and the stress of “What’s for dinner?” was looming over me every single afternoon.

The Turning Point
It was a brutal Tuesday in February—one of those South Dakota winter days where the wind chill hurts your face. I had gotten stuck in traffic on Mt Rushmore Road, my youngest had forgotten his gym bag, and I walked into a freezing house at 6:45 PM with absolutely no plan. We ended up eating cereal standing up at the kitchen island.
That night, staring at the sink full of bowls, I spotted my wedding-gift slow cooker gathering dust on top of the fridge. I realized I was doing it all backwards. I was trying to cook when I was most depleted. The next morning, I threw some frozen chicken breasts and a jar of salsa into the pot before leaving for work. Walking back into the house that evening to the smell of warm, savory spices—instead of the cold silence of an empty kitchen—changed my life.

What I Learned the Hard Way

My early relationship with the slow cooker wasn’t all sunshine and perfectly shredded poultry. I learned the hard way that not all crockpot recipes are created equal. I made plenty of “chicken soup” that was supposed to be a casserole, and I served my fair share of rubbery, dry breasts that required a gallon of water to wash down.
I also fell into the trap of thinking “dump meals” meant sacrificing flavor. For a while, everything I made tasted like same-y, gray mush. I realized that convenience doesn’t matter if the food doesn’t taste good. I had to experiment with layering flavors, understanding liquid ratios, and figuring out exactly which cuts of chicken could withstand an 8-hour simmer and which ones turned to sawdust.

My Approach Now

My philosophy today is simple: High flavor, low effort. I specialize exclusively in chicken because it is the most versatile, affordable, and family-friendly protein out there—if you treat it right. My approach is about front-loading the work to the morning (or the weekend) so that your evening self can relax.
I test every recipe in my own kitchen in Rapid City using ingredients you can find at any local grocery store. I don’t use obscure spices or complicated techniques. If it takes more than 15 minutes of prep, it doesn’t make the cut. I focus on textures and sauces that make you forget the food came out of a slow cooker, ensuring every bite is tender and rich.

What I Believe

Dinner is Sacred: The time spent eating together matters more than the complexity of the dish.
The “Cream of” Clause: There is no shame in using canned soup if it gets a hot meal on the table.
Variety is Key: Chicken doesn’t have to be boring; it can be curry, tacos, stew, or BBQ.
Tools Over Talent: You don’t need to be a chef; you just need a reliable appliance and a good plan.

How I Can Help You

I am here to save you from the drive-thru line. On my site, crockpotchickenrecipes.com, I curate the best, most reliable slow cooker chicken meals specifically designed for busy families. Whether you need a creamy pasta dish that cooks while you’re at soccer practice or a zesty shredded chicken for Taco Tuesday, I’ve got the blueprint.
I break down exactly how to keep white meat juicy, how to thicken sauces without clumps, and how to meal prep freezer bags so you literally just dump and go. My goal is to give you back an hour of your life every single day, while still feeding your family food that tastes like a hug.

A Little More About Me

When I’m not testing new buffalo chicken variations, you can find me hiking the trails in the Black Hills—I love that we have such beauty right in our backyard. I’m an avid thrifter, always scouring local shops for vintage Pyrex, and I’m a firm believer that coffee should be its own food group, especially during our long Dakota winters.

Let’s Connect

If you have a dusty slow cooker sitting in your cabinet, pull it out. Let’s make it your best friend. I’d love to hear what struggles you have with mealtime or what favorite flavors your family craves. Cooking shouldn’t be lonely, and it definitely shouldn’t be stressful.
