Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes in oil (drained and chopped)
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Place the chicken breasts in the slow cooker.
- In a separate bowl, mix together the sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
- Pour the mixture over the chicken in the slow cooker.
- Cover and cook on low for 360-420 minutes or on high for 180-240 minutes, until the chicken is cooked through and tender.
- Once done, shred the chicken gently with two forks and mix it back into the sauce.
- Serve hot, garnished with fresh basil if desired.
Notes
For added flavor, consider searing the chicken breasts before placing them in the slow cooker.
