Description

A simple and flavorful crockpot recipe for garlic butter chicken thighs that are tender and juicy, perfect for a comforting meal.


Ingredients

  • 2 lbs Chicken thighs (bone-in, skin-on)
  • 1/2 cup Unsalted butter (melted)
  • 4 Garlic cloves (finely minced)
  • 1 cup Chicken broth
  • 2 tbsp Lemon juice (freshly squeezed)
  • 1 tsp Italian seasoning
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tbsp Fresh parsley (chopped)
  • 1 tsp Crushed red pepper flakes (optional)


Instructions

  1. Place the chicken thighs in the crockpot.
  2. In a separate bowl, mix the melted butter, minced garlic, chicken broth, lemon juice, Italian seasoning, salt, and pepper.
  3. Pour the garlic butter mixture over the chicken in the crockpot.
  4. If desired, sprinkle in the crushed red pepper flakes.
  5. Cover and cook on low for 6-7 hours or on high for 4 hours, until the chicken is cooked through and tender.
  6. Once done, shred the chicken in the crockpot and stir it into the sauce.
  7. Sprinkle fresh parsley over the top before serving.

Notes

For a thicker sauce, mix a cornstarch slurry and stir it in during the last 30 minutes of cooking. Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months.
