A simple and flavorful crockpot recipe for garlic butter chicken thighs that are tender and juicy, perfect for a comforting meal.
Ingredients
- 2 lbs Chicken thighs (bone-in, skin-on)
- 1/2 cup Unsalted butter (melted)
- 4 Garlic cloves (finely minced)
- 1 cup Chicken broth
- 2 tbsp Lemon juice (freshly squeezed)
- 1 tsp Italian seasoning
- 1 tsp Salt
- 1 tsp Pepper
- 2 tbsp Fresh parsley (chopped)
- 1 tsp Crushed red pepper flakes (optional)
Instructions
- Place the chicken thighs in the crockpot.
- In a separate bowl, mix the melted butter, minced garlic, chicken broth, lemon juice, Italian seasoning, salt, and pepper.
- Pour the garlic butter mixture over the chicken in the crockpot.
- If desired, sprinkle in the crushed red pepper flakes.
- Cover and cook on low for 6-7 hours or on high for 4 hours, until the chicken is cooked through and tender.
- Once done, shred the chicken in the crockpot and stir it into the sauce.
- Sprinkle fresh parsley over the top before serving.
Notes
For a thicker sauce, mix a cornstarch slurry and stir it in during the last 30 minutes of cooking. Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months.
