Ingredients
- 4 boneless, skinless chicken breasts
- 4 medium-sized potatoes, peeled and diced
- 1 cup chicken broth
- ½ cup grated Parmesan cheese
- 2 tablespoons minced garlic
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon red pepper flakes (optional for heat)
- 2 tablespoons olive oil
- Fresh parsley for garnish (optional)
Instructions
- Season the chicken breasts with salt, black pepper, and Italian seasoning.
- Place the seasoned chicken breasts in the bottom of the crockpot.
- In a bowl, mix the diced potatoes, minced garlic, and olive oil. Toss well until coated.
- Add the seasoned potatoes on top of the chicken in the crockpot.
- Slowly pour the chicken broth over the chicken and potatoes.
- Sprinkle the grated Parmesan cheese on top. Add red pepper flakes for heat if desired.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- Garnish with fresh parsley and serve hot.
Notes
For juicier chicken, avoid overcooking. You can customize with additional veggies or try different cheeses.
