Description

A hearty and flavorful meal featuring tender chicken, creamy potatoes, and the classic taste of garlic and Parmesan cheese, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium-sized potatoes, peeled and diced
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tablespoons minced garlic
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional for heat)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)


Instructions

  1. Season the chicken breasts with salt, black pepper, and Italian seasoning.
  2. Place the seasoned chicken breasts in the bottom of the crockpot.
  3. In a bowl, mix the diced potatoes, minced garlic, and olive oil. Toss well until coated.
  4. Add the seasoned potatoes on top of the chicken in the crockpot.
  5. Slowly pour the chicken broth over the chicken and potatoes.
  6. Sprinkle the grated Parmesan cheese on top. Add red pepper flakes for heat if desired.
  7. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  8. Garnish with fresh parsley and serve hot.

Notes

For juicier chicken, avoid overcooking. You can customize with additional veggies or try different cheeses.
