A simple and flavorful garlic Parmesan chicken dish, cooked slowly with tender baby potatoes in a savory broth.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 1.5 pounds baby potatoes, halved
- ½ cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Wash and halve the baby potatoes. Mince the garlic.
- Rub the chicken breasts with olive oil and season them with Italian seasoning, salt, and pepper.
- Layer the halved potatoes in the crockpot and place the seasoned chicken on top.
- Pour chicken broth over the mixture, then sprinkle minced garlic and Parmesan cheese on top.
- Cover and cook on low for 6–7 hours or high for 3–4 hours until the chicken is tender.
- Check doneness (internal temperature should be 165°F) before serving.
Notes
Serve hot with a drizzle of sauce and optional extra Parmesan or fresh herbs. Store leftovers in the refrigerator for 3-4 days or freeze for up to 3 months.
