Description

A simple and flavorful garlic Parmesan chicken dish, cooked slowly with tender baby potatoes in a savory broth.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1.5 pounds baby potatoes, halved
  • ½ cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil


Instructions

  1. Wash and halve the baby potatoes. Mince the garlic.
  2. Rub the chicken breasts with olive oil and season them with Italian seasoning, salt, and pepper.
  3. Layer the halved potatoes in the crockpot and place the seasoned chicken on top.
  4. Pour chicken broth over the mixture, then sprinkle minced garlic and Parmesan cheese on top.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours until the chicken is tender.
  6. Check doneness (internal temperature should be 165°F) before serving.

Notes

Serve hot with a drizzle of sauce and optional extra Parmesan or fresh herbs. Store leftovers in the refrigerator for 3-4 days or freeze for up to 3 months.
