Description

A delicious and easy slow-cooked dish featuring tender chicken, flavorful potatoes, and a hint of garlic and cheese.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 cup chicken broth
  • 2 tablespoons freshly chopped parsley for garnish
  • Optional: lemon wedges for serving


Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, oregano, and thyme, ensuring both sides are coated.
  2. In a skillet over medium-high heat, add olive oil and sear the chicken breasts until golden brown, about 2-3 minutes per side. Remove and set aside.
  3. Sauté minced garlic in the same skillet for 1-2 minutes until fragrant.
  4. In the crockpot, layer halved baby potatoes and sprinkle with salt and pepper.
  5. Place the seared chicken breasts over the potatoes.
  6. Pour chicken broth over the chicken and potatoes to ensure they are moistened.
  7. Sprinkle grated Parmesan cheese evenly over the mixture.
  8. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken and potatoes are tender.
  9. About 30 minutes before serving, add fresh spinach and allow it to wilt.
  10. Garnish with chopped parsley and serve warm with optional lemon wedges.

Notes

For extra flavor, marinate the chicken in the seasoning for a few hours or overnight. Cut the potatoes into uniform sizes for even cooking.
