Description

A warm, hearty meal combining tender chicken, flavorful spices, and gooey cheese, perfect for busy days.


Ingredients

  • 2 chicken breasts
  • 2 cans Rotel tomatoes with green chilis
  • 2 cans black beans (drained and rinsed)
  • 1 can corn
  • 32 oz chicken broth
  • 1 packet dry ranch seasoning
  • 8 slices cooked and crumbled bacon
  • 8 oz cream cheese (at room temperature)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • Extra cheese (for serving)
  • Fritos (for serving)
  • Hot Sauce (for serving)


Instructions

  1. Add the chicken on the bottom of the slow cooker.
  2. Next, throw in all the other ingredients except for the cream cheese and cheddar cheese.
  3. Set the slow cooker to low for 360 minutes (6 hours) or high for 240 minutes (4 hours).
  4. Halfway through the cooking time, add the cream cheese.
  5. When it’s time to eat, shred the chicken and stir in the cheddar cheese. Let it melt before you serve.

Notes

Use frozen chicken if you don’t have fresh; just add a little extra time to the cooking. Adjust spices to your preference.
