A warm, hearty meal combining tender chicken, flavorful spices, and gooey cheese, perfect for busy days.
Ingredients
- 2 chicken breasts
- 2 cans Rotel tomatoes with green chilis
- 2 cans black beans (drained and rinsed)
- 1 can corn
- 32 oz chicken broth
- 1 packet dry ranch seasoning
- 8 slices cooked and crumbled bacon
- 8 oz cream cheese (at room temperature)
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp garlic powder
- Extra cheese (for serving)
- Fritos (for serving)
- Hot Sauce (for serving)
Instructions
- Add the chicken on the bottom of the slow cooker.
- Next, throw in all the other ingredients except for the cream cheese and cheddar cheese.
- Set the slow cooker to low for 360 minutes (6 hours) or high for 240 minutes (4 hours).
- Halfway through the cooking time, add the cream cheese.
- When it’s time to eat, shred the chicken and stir in the cheddar cheese. Let it melt before you serve.
Notes
Use frozen chicken if you don’t have fresh; just add a little extra time to the cooking. Adjust spices to your preference.
