Ingredients
- 2 to 3 boneless, skinless chicken breasts or thighs
- 1/2 cup honey
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons apple cider vinegar
- 1/4 to 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup water or chicken broth
- 1 to 2 tablespoons cornstarch
- 2 tablespoons water (for slurry)
Instructions
- In a bowl, whisk together honey, soy sauce, apple cider vinegar, minced garlic, and red pepper flakes if using.
- Place the chicken in the bottom of your slow cooker and pour the prepared sauce evenly over the chicken.
- Cover and cook on low heat for 4 to 6 hours, or until the chicken is tender.
- Mix cornstarch with 2 tablespoons of water to make a slurry, then stir it into the slow cooker.
- Increase temperature to high and cook for an additional 15-20 minutes until the sauce thickens.
- Shred the chicken in the sauce or serve whole, garnished with green onions, cilantro, or sesame seeds if desired.

Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
