Description
A comforting and zesty meal featuring tender chicken cooked with lemon and herbs, served over fluffy rice.
Ingredients
- 4 chicken thighs or breasts
- 1 lemon (juiced and zested)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup white rice
- 2 cups water
- Fresh parsley (for garnish)
Instructions
- In a bowl, mix lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
- Place chicken in the slow cooker and pour the lemon herb mixture over it.
- Add chicken broth to the slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before the chicken is done, rinse the rice under cold water.
- In a pot, combine rice and water; bring to a boil, then reduce to a simmer and cover. Cook for about 15-20 minutes.
- Once the chicken is cooked through, shred it in the slow cooker or serve whole over the rice.
- Garnish with fresh parsley before serving.
Notes
Use bone-in chicken thighs for juicier results. Browning the chicken before cooking can enhance the flavor.
