Description

A comforting and zesty meal featuring tender chicken cooked with lemon and herbs, served over fluffy rice.


Ingredients

  • 4 chicken thighs or breasts
  • 1 lemon (juiced and zested)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup white rice
  • 2 cups water
  • Fresh parsley (for garnish)


Instructions

  1. In a bowl, mix lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
  2. Place chicken in the slow cooker and pour the lemon herb mixture over it.
  3. Add chicken broth to the slow cooker.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before the chicken is done, rinse the rice under cold water.
  6. In a pot, combine rice and water; bring to a boil, then reduce to a simmer and cover. Cook for about 15-20 minutes.
  7. Once the chicken is cooked through, shred it in the slow cooker or serve whole over the rice.
  8. Garnish with fresh parsley before serving.

Notes

Use bone-in chicken thighs for juicier results. Browning the chicken before cooking can enhance the flavor.
